BAZELLA W RIZ

 

Ingredients:

  • 1 whole chicken, rinsed with parts removed

  • 1 medium white onion, chopped

  • 2 Tbsp ground cloves

  • salt and pepper to taste

  • 3 cups basmati rice

  • 6 cups chicken broth*

  • 1/2 bag frozen peas

  • 4 tbsp pine nuts

  • 2 tbsp butter

Instructions:

Place the chicken, chopped onions, ground cloves, salt and pepper in a large soup pot; add enough cold water to cover the entire chicken. Bring to a boil over medium heat; cover and reduce heat to low and simmer for about 90 minutes or until the meat starts to fall off of the bone. Shred the chicken and put aside saving the chicken broth for the rice.

To make the rice, use the *chicken broth from the chicken. You may need add more chicken broth or water depending on how many cups of rice you plan to make. Follow the instructions on the rice, usually the rice takes about 45 minutes to cook.

Once the rice is cooked, place the frozen peas onto the top of the rice to cook. Let the rice and peas cook for 15-20 minutes.

While the peas are cooking in the rice, in a small sauce pan over medium to low heat, brown the pine nuts with the butter. Make sure to stir constantly as you want to lightly brown the pine nuts.

Combine the chicken, rice, peas and pine nut back in the large pot and mix together.

Serve immediately. We serve with the yoghurt cucumber salad on top.
